A dish called Doi

Today I got to try a Bengali dish called Doi. It is served at celebrations like Eid, and big gatherings. It’s one of those dishes – you can’t believe how simple it is.

It looked like this:


It tasted a bit like a very rich baked custard, with a slight caramel note and a slight sour tone.

How do you make it?

My colleague said she used:
Natural yoghurt
Evaporated milk

Then she:

Blended it
Stored it near a hot water heater for 24 hours.

She also said that it is a favourite served with the rice pilaf dish Biriyani!
