Yeasted banana bread

I got some free overripe bananas from my local corner store – just perfect for making banana bread.

Would your giant ColesWorthDi supermarket do that for you?

I got the recipe from Treat & Trick.

There were two modifications I made.

The first was instead of:
“(2) Place flour, yeast and brown sugar in a mixing bowl. Stir to mix.”

I did the following:
(2) Mix 1 tsp of dry yeast (1 packet), 1 tsp sugar, 1 tsp flour and 1/2 cup of warm milk. Stir to combine. Leave to rest in a warm place covered with a tea towel for 20-30 minutes, until the mixture becomes ‘foamy’ and activated.

The second modification was I replaced:
“1/2 C vegetable oil”

with:
Splash of Vegetable oil (approx 1 tbsp), and 1/2 cup soy milk. This makes 1 cup, total.

After 40 minutes of resting the cake batter in its tin in a warm place, it looked like this:

(The small one took 20 minutes).

And it was bananary, light, slightly yeasty like a hot cross bun; but most importantly, it was delicious.
